The core temperature probe is integrated with the unit and also has a dehumidification function. The Anvil 4 Tray Combination Steamer has 3 cooking modes: Combination mode to combine steam and convection, Convection mode for hot air only, and Steam mode for steam only. Also, it has a manual steam button that can be used in convection mode.

The Anvil 4 Tray Combination Steamer is supplied with four gastronorm trays and four wire shelves. It is constructed of heavy-duty stainless steel, a powerful circulation fan, and a removable interior fan panel for easy cleaning. All interior parts are also made of 304 stainless steel. It is made to hold four 2/3 size gastronorm pans 65 millimeters deep. This unit has a large glass door that has a cool touch locking handle. The two-stage locking handle is manufactured to safely release heat before the door is opened. This catering equipment has a water inlet plus drain connections that are conveniently located at the rear of the unit.
